Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.

We are pleased to announce that we are offering tours of the distillery. The tours will give you a unique look at the process, equipment and ingredients that go into our quality spirits. Guests will be guided by distillery personnel and shown all the key components of the distillery. If you are lucky, our two distillery cats - Gin and Tonic, will also join your tour (cat allergy warning). The tour will include a detailed explanation of the distilling process including the Herkimer Diamonds. Lucky visitors will also get to meet Gin and Tonic, the distillery cats. The tour will last approximately one half hour leaving plenty of time for questions and answers. Tours are available for 2-20 people, Monday- Saturday by appointment. Tours will end with a sample tasting and each member of the group will receive a complimentary Adirondack Distilling Company etched souvenir glass. Cost for the tour is $10, please call 315-316-0387 to schedule your tour. (Tours for larger groups and on Sundays available on a case by case basis).
