Fremont Mischief Distillery

Fremont Mischief is a full-circle distillery. They begin by selecting the finest organic grains and botanicals. Together with pure artesian waters, our carefully selected ingredients are skillfully drawn into fine spirits with the help of our artisan stills. Then, their spent grain is reused and ultimately returns, full-circle, as organic compost for farms and gardens. They recognize the artistry in crafting fine spirits. Their stills are a work of art themselves. They are hand-made by Arnold Holstein Co., a German family that’s been building distilleries for more than 50 years. Working closely with the still-maker, they incorporated proprietary distillation technologies into the columns of our stills. There is no need for twelve times distilled or even three. Their stills allow us to produce pure, flavorful spirits the very first run.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
