3 Howls Distillery

Built with a love for craft distilling, a flair for the extraordinary and a fearless creativity—3 Howls’ spirits will always leave you howling for more. 3 Howls’ mission is to create exceptional handcrafted spirits, with our own specific Northwest flavor.
We start with distinct base ingredients like European malted barley and sweet Barbados molasses. The whiskey is fermented in state-of-the-art stainless steel tanks; the rum in a large open-top cypress ferment tank. Next, the spirits are distilled using a 300-gallon copper-packed still. All of our vodkas and gin are flavored with all natural ingredients. Finally, all of our premium craft spirits are bottled, labeled and packaged by hand for your pure enjoyment.
Though we are proudly rooted in the Pacific Northwest, inspiration for 3 Howls distillery comes from all the way across the pond. Ankle deep in a peat bog on a distillery tour in Isla, Scotland, our Founder, Will, first heard the story of the Cù-Sìth (pronounced koo-shee). Legend has it this giant hound roams Scotland’s highlands and moors, howling three times before he takes souls to the underworld.
The three howls of the Cù-Sìth, combined with a tongue-in-cheek nod to those who love to howl at the moon after a cocktail or two, morphed together to form the brand that we now fondly call 3 Howls.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
