Vapor Distillery

Vapor Distillery, formerly Roundhouse Spirits, was started in 2008 with this simple goal of making quality craft spirits that discerning patrons can enjoy and share. The finest natural and/or organic ingredients are used to develop flavor and aroma in unique innovative products that simply can’t be matched by the faceless conglomerates that rely on marketing rather than quality.
The wizard behind Vapor Distillery’s products is Ted Palmer, a principle owner and the head distiller. He’s been a master brewer since graduating from the Siebel Institute in 1994, and has worked at a number of craft breweries big and small in the Seattle area. However, Ted’s first love has always been distilling since learning about first-hand it from his Grandfather in a garage in Denver.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
