We only offer Private Tastings BY APPOINTMENT ONLY. Our Meadery is in a building behind our home. We are a small, 56 time INTERNATIONAL award winningMeadery /Honey Winery. Our Meads are created using honey from our own beehives plus other local honey. We have 22 Meads ranging from Dry to Sweet. We are ‘well behaved” dog and child friendly! We include a Varietal Honey Tasting along with the Mead Tasting, all for just $6 per Person. This is NOT your typical,stuffy Wine Tasting experience, we are casual and friendly and love to talk to people about Mead, bees! We have limited quantities of our Honey for sale and a few varieties of other Honey for sale, such as Cranberry Blossom and Brazillian Pepper Tree Blossom!. 13 YRS. IN BUSINESS!

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
