Our winery boasts it’s German heritage with wines made from grapes grown on our 22 acre property minutes away from Bloomington/Normal, IL. With 15 labels, the wines run from dry to semi-sweet reds, as well as lovely dry to semi-sweet white wines and yummy sangrias. We pride ourselves in the fact that we “let the wines make themselves”, by being stewards in the vineyard from pruning throughout the season until harvest and we let the grapes let us know when it is time to harvest. With passion for what we do and lots of love, each wine produced on our small farm is individually hand crafted to give our customers the experience of tasting the natural grape varietals without added chemicals or aftertastes. Our property is set on 22 acres with 12 1/2 acres of vineyards surrounding a former log residence converted in to our winery and tasting room facility. The wrap around porch offers a place to sit, relax, watch birds and wildlife and enjoy our lovely wines while gazing as the sun sets over the Prairie.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
