Pivot Brewing

Pivot Brewing is Kentucky’s only cider brewery. Using apples pressed fresh on site, we strive to brew the highest quality semi-sweet ciders.
We created Pivot to be a place that brings the community together. We love that we are a place where people can create, experiment, gather, and have fun.
When you visit us in our brewery taproom, you may notice a small section on our giant chalkboard called “Concoctions”. This is where we list our latest beer and cider mashups. With 12 ciders and 8 beers on tap, we can make 190 different combinations at any given time (we did the math). The next time you visit us, make up a combo of your own. If you make a good one, we’ll let you name it and put it on the board!
As Pivot continues to grow, our pressing days have gotten longer and more involved. In just a year, we have gone from pressing enough apples to fill one 10 bbl tank (155 gallons), to needing to press enough to fill two 90 bbl tanks (2,790 gallons). We’re not saying we’re crazy, but we’re a little crazy.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
