(512) Brewing is an Austin based microbrewery dedicated to organic and locally sourced ingredients. We buy more USDA Organic malted barley than anyone in Texas (400 tons in 2016). Home to the original Pecan Porter and our heavy hitting (512) IPA, we strive to produce high quality delicious beers for our neighbors and friends throughout Texas. We’re COMPLETELY Independent of big beer interests, we self-distribute our beer and we’re draft focused. All this means we can better control beer quality because we oversee every step of the process from grain to glass. Don’t miss us at bars and restaurants since you won’t see us at package stores and be sure to try something new alongside our flagship beers!

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
