The production and consumption of beer and wine have been an integral part of human culture throughout human history. Although the development of these two food and beverages has progressed parallel over millennia, the current situation of beer is very different from that of wine.
Diversity and individuality dominate wine. The regional consolidation of this diversity, for example, into wine routes and the associated tourism and economic boom of entire regions, is well known.
In the case of beer, industrial production in large breweries predominates. The result is “standard beers,” industrial beers with which the consumer is “delighted.” Aside from these major brands, there are special opportunities for small and microbreweries by creating a distinctly different offering through flavorful beers.
My wish is to strengthen and promote this beer diversity and individuality, thus lending the region additional appeal and increasing the added value of its businesses and tourism enterprises. Beer lovers should benefit from the regionality and individuality of my beers and get to know beer as a pleasure.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
