Brasserie La Binchoise
Heir to a brewing tradition dating back to the 19th century, Brasserie La Binchoise received its true letters of nobility in 1995 when it won the platinum medal for the Christmas Special and the gold medal for the Bear beer. A double recognition that allows the brewery to open up to the world. Indeed, the creations of La Binchoise now satisfy connoisseurs in the United States, Japan, Canada, Italy, Switzerland, France, etc.
Brewed by infusion in a vat heated over direct heat at the Faubourg Saint Paul or in our new brewing hall at L’Octroi, all La Binchoise beers are top-fermented: La Binchoise Blonde, La Binchoise Brune, La Binchoise Triple, La beer des Ours, The Christmas Special, The Belgian. The Binchoise beer range also includes original products such as the Embuscade – our fruit beer. We are specialists in beer aged in oak barrels, Binchoise XO and Scott
The beers of the La Binchoise brewery owe all their character to the rigorous selection of the raw materials that go into their composition, to water balanced in mineral salts, to the best malts and to hops carefully selected for the brewer. It should be noted that we work 95% with hops from Luc Lagache’s farm in Warneton, top quality 100% BELGIAN. Add to that the know-how of the brewer and the alchemy of his subtle blends of spices and you will understand where the beers of La Binchoise draw their original character.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
