At Deep Cove Brewers and Distillers we strive to create unique, high quality spirits. As a local small batch distillery we are able to experiment with flavours, botanicals, and processes that result in diverse and exciting taste profiles.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.

We want to invoke passion out of our guests towards this growing industry. What will you be expecting on a tour at Deep Cove Brewers and Distillers? You will receive a guided tour through our facility. You will learn a little bit about the distillation process and how barrel aged spirits are created. You will gain a brief overview of the brewing process and behind the scene techniques. When your facility tour is completed our finest beers will be ready for your consumption in a five taster flight. You will then be guided through your tasting flight selections and left to enjoy the delicious brews!
