London Brewing Co-operative

The London Brewing Co-operative is a worker co-operative brewery in Old East Village. We brew a beer that is as local and as organic as possible – we don’t just brew locally we source locally. This is a truly local beer.
Our mission is to produce high quality beers that meet the diverse needs of today’s drinker. Our beers will reflect the importance of the community in how ingredients are sourced and in the recipes we develop. We will emphasize the importance of building ties across our industry and related industries within the city and the surrounding communities. We aim to position ourselves as a destination for residents of London and for visitors in experiencing the richness of South Western Ontario and its brewing community. A visit to our tasting room, retail shop, and brew house will be an engaging experience where customers can learn about local beer and local ingredients.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
