A still was purchased in 2009 and our distilling adventure began. The focus has always been on single malt whisky, since that is, at its core, distilled beer that is barrel aged. However, when one has a still in the building, you play with it. Our main playground is the production of Concepts spirits, essentially our test kitchen to produce a variety of spirits in short runs. Gin was one of those spirits, and we perfected our recipe to produce a full time gin. We also produce hard seltzers, called Supergood, made with real fruit juice (never a flavouring). Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.

We have a maximum number of 6 people per tour to ensure a safe and informative tour. We will take phone bookings, but only for the current day and the next. Of course, walk-ins are welcome if the tour (which takes about 45 minutes) is not full and you should arrive 15 minutes prior to the tour. We will take you through the brewery & distillery explaining the brewing, fermentation, barreling, and packaging components of making our beer & single malt whisky, then you get to sample it!
We charge $10.00 per person for our tours, and ALL proceeds — 100% of them — go to local fundraising events and charities. So feel good about that while you drink some delicious craft beer!
