The Castle Brewery was founded in 2015, as the very first brewery in Hustopeče. Beer had never been brewed in Hustopeče before, due to a lack of drinking water.
The technology supplier is the company Destila Brno. Brewhouse with a capacity of 5 hl, CK tanks, lager tanks.
After a break of several years forced by the Covid pandemic, the brewery was reopened under the name Rustikal Brewery.
We brew bottom-fermented and top-fermented beers. Bottom-fermented – draft light 10%, light lager 11%,12%,
semi-dark lager 11% and top-fermented – light IPU 11% and 16% black Stout.
The beers are named after important personalities who have a relationship with the city of Hustopeče.

We buy quality raw materials – malt from the Záhlinice malt house and high-quality processed hops. The basis of the bitterness and aroma of our beers are Czech hops, which are renowned in the world. For the production of ALE beers, we use hops from America, Australia and other countries, which bring aromas of herbs and citrus to the beer.
The brewery also has a beer hall in which the beer is served and you can also taste it in the restaurant of the Rustikal hotel.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
