The Hasen-Bräu is one of the oldest breweries in Augsburg. Its roots go back to the year 1464. Not only are we very proud of this, but above all we have a duty to preserve and preserve this heritage.
As in the past, we brew our rabbit beers in the best house-preu tradition. In other words, according to traditional recipes, in an artisanal manner – and especially with a lot of time, leisure and care. It goes without saying that we use only carefully selected and strictly controlled raw materials for brewing: crystal-clear and particularly soft water, malt from local spring barley, yeast from our own pure breeding and the finest aroma hops from the Hallertau region.
After all, we Augsburger were pioneers in terms of purity and beer quality. And we stick to it today. Our rabbit beers guarantee the genuine, unadulterated beer pleasure. That’s what our trademark, the rabbit, stands for.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
