We still brew our own beer! Our rustic inn brewery is one of the smallest breweries in Bavaria. The brewing tradition has been linked to our inn for centuries. That’s why we’ve been heating up our brewing kettle again since 2011 to brew craft beers according to the Bavarian Purity Law. Our brew kettle is located in the middle of the historic vaulted ceiling of the old post office. The copper brew kettle can produce up to 250 liters of beer in a single brewing cycle.
From just four ingredients – hops, malt, water, and yeast – we brew our three classic beers in our inn brewery according to a time-honored family recipe. “I’m fascinated by the diversity that can arise from simple ingredients.” – Innkeeper Florian Huber. Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
