As the first organic brewery in Germany, we have been brewing according to old brewing law since it was founded in 1984 at the historic brewing site at the foot of the Nuremberg Imperial Castle.
Around the small red beer brewery and whiskey distillery in Nuremberg’s Altstadthof you will find our gastronomy with Bräusstüberl, cellar bar Schmelztiegel and Restaurant Bühne as well as our summer garden. Here you can enjoy the original Nuremberg red beer, beer distillates, single malt whiskey and our down-to-earth Franconian fresh cuisine.
Our organic single malts have now received several awards as the best whiskey in Germany. 2020 AYRERS Alligator.
With AYRER’s Single MaltGin, 100% organic malt and 7 botanicals (including flavor hops and citrus grass) we create a fruity, fresh profile and a completely new gin experience. In 2020, supplemented by AYRERS Juniper Gin and AYRERS Barrique Gin, we now offer a malt gin range in true organic quality.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
