Dalheimer Klosterbräu - Wirtshaus Kloster Dalheim
At a historic site, in the Dalheim vaulted cellar, one of the oldest monastic traditions comes to life again after more than 200 years. Beer is being brewed again in Dalheim – right in front of your eyes. On the designated brewing days, the master brewer himself is on site and gives you unusual insights into a maturing process that results in a unique beer: the Dalheimer Klosterbräu. On the various brewing days of the year, barley juice is made in the brewery’s two glass kettles according to a special monastic recipe – brewed with original Dalheim water, which the Augustinian canons used for this purpose. You can not only see what makes the traditional Dalheimer Klosterbräu so special, but also try it yourself on site in the monastery inn or take the original bottle home with you. Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
