JJ's Brewery
We were established with a simple philosophy in mind and that is to produce premium crafted beers full of aromas and flavours that can be enjoyed by all. Taste and enjoy! Take a tour of our brewery and learn about our history, how we brew our beers and what makes us different. On this tour we’ll show you the steps needed to brew each of our batches, starting with the grain and ending up with out finished beers. Meet our brewers, experience our passion for the craft and have the opportunity to taste the special malts and smell the hops that combine to produce our award winning beers, accompanied by our home-baking flavoured by our beers. Tours are by appointment only. We do welcome special bookings outside of normal working hours.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
