Against The Tide
Against The Tide brews bold craft beers, pushing the imagination and defying the the current status quo.
Drawing experience from the American and North European markets, we brew mainly Ales, from a Milk Stout with Carob and an Oatmeal Stout with cinnamon infusion to pale and black IPAs infused with tea herbs, to the bigger styles like Barley Wine, Russian Imperial Stout and Scotch Ale.
We also brew Ciders and diverse brewers Mead (carbonated).
We are a small batch Nano Brewery focused on producing various beer styles, with high rotation, aiming to provide an amazing beer experience, setting us apart from the normal trends.
Drinking our beer should be an experience for a discovery of new beer flavors, not just a gesture done out of habit to drink one more “mini”.
Our beers are made with far more cereal than your average supermarket beer and a careful selection of hops and yeasts and we brew them with a distinct Sintra water signature.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
