20 years ago Lightning Ridge Cellars was launched. Today we write to let you know we’ll be moving to the next chapter in our business. Over the years, we’ve enjoyed meeting and becoming friends with many of you. This shift in business comes with the changing times and we look forward to connecting with you in our new venture.
Lightning Ridge Cellars will transition to a winery with a wine club, participate at some festivals, but will no longer have a tasting room.
It will take some time to convert to our new business profile, but we’ll keep you posted on what’s happening via our website and Instagram page. Our tasting room will be closed as of the end of December 2024.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
