TAPS Fish House & Brewery was founded in 1999. Many of our beers reflect the classic brewing traditions of Europe, including England, Germany, and Belgium, while others are indicative of the creativity and innovation that are the hallmarks of the American Craft Beer scene.
TAPS’ repertoire of ales and lagers is highly varied and reflects a nod to tradition with a focus on perfection and innovation. The brewing team produces approximately 3000 kegs, or 46,500 gallons of beer annually. Our brewers supply TAPS in Brea, Corona and Irvine, as well as our sister restaurants, The Catch in Anaheim and Lillie’s Q in Brea Downtown. TAPS also distributes fine beers to restaurants and pubs throughout Southern California. We have received national and international acclaim for barrel-aging programs, which produce cult classics such as Remy’s Pappy.
We source the finest ingredients from around the world and utilize the best brewing procedures to create truly great beer: “World Class in Every Glass.” The hops and barley are meticulously sourced in order to emulate the fine beers and brewing regions of the world. We utilize proprietary strains of yeast, reverse osmosis filtration, and tailor our water chemistry and processes every time beer is made.
TAPS’ passion for perfection has been recognized on the regional, state, national and international levels—to date we have received over 70 medals for our fine beers. TAPS barrel-aged products have also garnered national and international acclaim and are treasured by collectors worldwide.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
