Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.

FOUR GRAIN STRAIGHT BOURBON WHISKEY

Our tours consist of an in-depth educational session of the whiskey-making process here at Laws Whiskey House; from where the grains we use in our whiskeys grow, through the entire mashing, fermentation, distillation, and aging processes. Following your educational session, you will tour the production facility and rack house and finish with a formally-guided whiskey tasting.
Tour cost is $10 per person at the door. A credit of $10 will be given towards any whiskey or merchandise purchased in our tasting room. A valid I.D. is required upon check-in for tour guests. ADULTS ONLY, Age 21+ only.
Approx. time duration: 1:30
Reservations can be made online, up to three weeks in advance, space permitting. Tours are limited to a maximum of 15 people to provide a more intimate experience. Online tour reservations close one hour prior to the beginning of the tour. If there are any unfilled spots after this point, they can be filled by walk-ins on a first-come, first-serve basis.
