Old Town Distilling Co., located in the brewing district of Fort Collins, is Northern Colorado’s first and only certified organic distillery.
Chief Distiller Jeremy Kempter founded OTD in 2014 after 10 years of owning and operating a cocktail bar and nightclub in Old Town Fort Collins.
In solidarity with local organic agriculture and in an effort to limit our carbon footprint, we source all raw ingredients from within the state of Colorado, working closely with neighboring organic farmers.
We pride ourselves on sustainable business practices, ensuring complete production efficiency, filtering finishing water of chlorine and fluoride, recycling all components of our process, and providing spent vodka and whiskey grains to local cattle and hog farmers.
We strive to craft the finest spirits possible that, while inspired by the traditions of our favorite distilleries, are wholly original in quality and concept and distinctive in taste.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
