In an era of extreme everything, the Charter Oak Tree quietly stands apart as a patriotic symbol of strength and truth. That’s why we chose Connecticut’s beloved tree to be the symbol of our dedication to brewing the most honest, freshest and un-hyped beer possible.
Our ales are handcrafted from 100% natural ingredients: select malted barley, choice hops, special yeast, and using only the purest water for a unique and delicious taste. We never use any adjuncts or preservatives.
Each varietal is carefully brewed to be the ideal balance of flavors for that style beer. But also our beer is entertaining and enriching. For the enjoyment of our beer lovers, we have extensively portrayed the true events of the Charter Oak legend. Each variety and seasonal ale will share different parts and characters of this enduring story. We hope you enjoy our beers as much as we enjoyed brewing it.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
