Fruitshine Wine
Our wines are made and taste different than your regular chemically made wines.We use handpicked real fruit 1.5-4 lbs in every jar. Our wines are 14-18% alcohol(no headaches). We use no chemicals preservatives or fake flavors (NO SULFITES)! We try to make our wine taste like the fruits they are made from. You blend our wines to increase or decrease sugar levels and play with flavor profiles to make our wines what you want to drink. Every wine is handmade hand bottled small batch wine. We put our money into the wine you are drinking not the fancy tasting room or fancy bottle. We like to think of ourselves as artists. Our medium is wine. Our canvas is your pallette. Off season just call. Well open just for you. Come enjoy something different!

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
