On behalf of all the Schnabeltier staff and ownership we would like to thank you for your support and friendship over the past years. We began this journey to share our love of great wine and cheese with our community, and we have been happy to serve you. We are extremely proud of our employees who have won numerous awards with their quality products, and our retail staff who have continually maintained one of the best customer experiences possible. However, with the success of our other businesses, it has become apparent that ownership cannot spend the time and effort to effectively manage operations and provide the support that Schnabeltier deserves.
It is our hope to find another owner who can continue to operate out of the facility, but effective May 7th, 2022 Schnabeltier will be closing its retail operations at 491 Apache Drive in Rochester, Indiana.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
