We have a great respect for the bourbons and the distillers that have come before us. So, for us, this venture is not about reinventing the wheel. It’s about creating our own sound. Our distillery is where the shared passions for spirits, collaboration and creating the unexpected intertwine, and new time-honored traditions are born. We are urban with old roots, bringing our own New Riff to the Kentucky bourbon tradition. Knowledge, ambition and absolute drive for quality, these are the hallmarks of New Riff Distilling. We opened in Spring 2014 with a simple goal: to someday be included among the great small distilleries of the world. We make mostly Kentucky bourbon, but our experience, passion and palates for fine spirits run to worldwide extremes. Everything you see, taste, learn and experience reflects our dedication to delivering only the best, and drives us to be the best, renowned for making world-class whiskey like it’s the last thing we’ll ever do.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.

We offer free tours that give you a firsthand look at our distillery. One of our guides will lead you on an in-depth journey through the nooks and crannies of the distilling process, from grain to barrel. After each tour, we offer a complimentary tasting of a variety of spirits. Tours and tasting usually last between 45 and 60 minutes. For inquiries regarding private tours please email info@newriffdistilling.com. **Please Excuse Our Mess: Starting in mid May the production areas of the distillery will be under construction. Some of our regularly scheduled tours and special tours have been cancelled. We plan to continue to offer as many free public tours as possible, but ask for your understanding if there are any changes, alterations, or obstacles in the months to come.
