Like all great booze, Gray Skies spirits are a reflection of where they are made. The same Great Lake responsible for the atmosphere after which our distillery is named provides the water that we use to craft our spirits. An image of Lake Michigan is printed on every bottle we manufacture.
Gray Skies spirits are a distillation of the Midwest, Michigan, Grand Rapids and our neighborhood. We are a small batch distillery sitting in Grand Rapids North Monroe industrial district, a place with a long tradition of making things. We chose this area to continue this tradition. We make spirits because we love doing it and we hand bottle everything we make in Grand Rapids because we love being here. Our spirits are crafted from the Great Lakes.
There is a motto at Gray Skies: good hooch made local. Our only goal is that if you try one of our spirits you agree this motto fits.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.

Gray Skies offers a Craft Distilling tour free of charge and a Sneak Peek tour for $10. Both tours are led by a knowledgeable distiller who will walk you through the entire whiskey making process including fermentation, distillation and aging all done on site at our Grand Rapids facility. Tours are roughly 45 minutes long and include a guided tasting of Gray Skies spirits. Distillery temperatures vary with the season meaning hot in the summer a cold all winter so please dress accordingly. Tours are limited to 20 people, please contact for larger groups.
