The O’Fallon Brewery was founded by Fran and Tony Caradonna, in 2000. In January they ordered their brewing equipment and sold their first keg on May 6, 2000. The Caradonnas did all the brewing and selling for the first two years, brewing only one style (O’Fallon Gold), selling only kegs and delivering only in St. Charles County. Over the next several years they continued to grow their brands and distribution area. In May 2011 they sold the brewery to Jim and Debbie Gorczyca, but Fran continues to play a part of day to day operations as the Brewery’s General Manager. In June 2015, we moved to Maryland Heights, MO. moving all of our production under one roof, and also opened the O’Bar, our restaurant and tap room.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
