At The Unknown Brewing Company we are more than just a name. A name does not mean you make good beer, and good beer does not have to have a name.
Our job is to stand out. We are the open road with no destination. We are your first kiss or your last time jumping out of an airplane, or whatever your wildest adventure is. We are The Unknown.
So if you need us to have a name, make one up. If you make one up we prefer you call us something with adventure, or America, or dragons or something epic. That would be awesome. All we know is that we are good people whose mission is to make really great beer and have fun doing it. So our call to you… Step into the Unknown.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
