Sanctuary Brewing Company is a nano brewery and tap room committed to enriching the lives of humans through our excellent craft beer, and benefitting animals through local advocacy. We are starting this business as an extension of ourselves, beer enthusiasts and animal lovers with a strong sense of community and environmental responsibility.
Sanctuary Brewing Company is more than a purveyor of great-tasting craft beer, we also serve as an active community resource that helps feed the local economy and Hendersonville community as a whole by sourcing from local, organic products whenever possible.
Our taproom offers several flag ship brews, including our Hop Pig IPA, Bobby Beer Kolsch, and Carolina Panther Chocolate Stout. Other taps are dedicated to seasonally inspired flavors and incorporate produce from local farms whenever possible. This refers to not only traditional beer ingredients such as hops, barley, wheat, and rye, but fruits, vegetables, spices and additional grains as well.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
