Eudora Brewing Co. is Dayton’s first and only customer brewing facility and nano-brewpub. Both the tap room and the customer brewing area are now open!
At Eudora, YOU are the brewmaster. Anyone over the age of 21 is welcome to come in and brew their very own batch of beer in our brew-on-premises facility. We have a variety of styles available to brew, and we’re continually adding styles to choose from. Whether you’ve brewed before or you have no idea what you’re doing, we’re here to guide you through every step of the process and make it as easy and as fun as possible.
Eudora also serves as a taproom, where we brew our own ales and lagers and serve them on draft. The pub is open to brew-on-premise customers as well as the general public. We offer a variety of award-winning house-brewed beers as well as non-alcoholic beverages.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
