Our Dream of a Caribbean bar still lives and “Bill & Steve’s is not gone, we’ve just made a slight path correction on how we plan to get there. A you know we’ve been brewing for a while and those who have shared this building process and followed us along the way we will be forever grateful to. From the conception, creation, and to the birth of the “Duffmeister” you’ve been there. Through brewing perpetual stoppage, to the crafting of the “Gruesome Grinch Belgian Holiday” and the “Koala Kick Pale Ale”… you’ve supported us (Even as just taste testers). Its now time for us to move on and move up with making this Brewery a reality. Continue to follow us on our journey, Share with your friends, and welcome them into the fold. Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
