Our background is in the beer biz. Everything from distribution and importing to German training and brewery operations. A few years ago we had an opportunity that would allow us to open up our own brewery. We jumped on it.
We’re extremely excited about this project, and we think it shows in everything we do. This is just plain fun for us. The day it starts to feel like a job is the day when lightning shall strike us dead. Cause, hey, at the end of the day we’re making beer. And beer is fun.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.

Tours at Karbach Brewing Co. are entertaining and informative. Our tour staff will lead you through the areas of production to explain the company history, the brewing process, and the brewing philosophy here at Karbach. Questions are welcomed and guides will be available to answer remaining questions at the conclusion of the tour.
