Vallensons' Brewing Company

Vallensons’ Brewing Company’s Grand Opening is set for May 27, 2017!! We are a nanobrewery, which allows us to make many different beers, some regularly, while others will be quick creative outbursts based on input from family, friends, and the community. Our goal is to have a variety of beers on tap so we can satisfy the cravings of craft beer lovers or those who are new to craft beer. All of our beers will be small batches using the finest ingredients available. Some of our flagship beers include IPAs, Porters, Ambers, Stouts, and Sessions. We will also have several seasonal beers available. All of our beers will be available in the Vallensons’ taproom, in a growler to go, and some local restaurants/bars. Vallensons’ Brewing Company looks forward to sharing our product with all.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
