Temple Distilling was founded in 2014 with one goal in mind: To craft the best london dry gin available this side of the pond.
We began our story with Chapter One London Dry Gin, which received numerous awards right out of the gate. The tale continued with our bold Navy Strength version, with it’s own unique cast of botanicals.
Our Bookmark Limoncello signaled a time to pause and rest, enjoying life’s sweeter moments, and our oak kissed Woodcut Barrel Rested Gin takes the plot to new heights through the influence of used bourbon casks. Much like a good book, once you meet our characters and dive in, you won’t want to put it down.

Author: Caroline Porsiel

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.

We have a small tasting room adjacent to our distillery in Lynnwood, WA offering tasting flights, sample cocktails, and retail sales.
Open most Saturdays from 12-5 & by appointment (during the week just call or email, if we’re in we are happy to offer tastings, tours, and bottle sales etc).
Email us for more details if you are interested in reserving our space for your private party or event, we can typically host 25-30 people.
Tastings start at $5 and we also offer cocktails and mini-cocktail flights. Kids are always welcome.
