The Brewing Projekt
The Brewing Projekt brews on a three vessel 20BBL (620 gallon) brewhouse with four 20 BBL and two 40BBL unitank fermenters. In addition EVERY member of The Brewing Projekt’s team is required to familiarize and utilize it’s 1/2BBL (15 Gallon) pilot brewery in order to push innovation in every soul who takes part in the creation of our beer. Thats right. EVERY member of the team needs to know and understand the process by which we turn water, malt, hops, and yeast into beer. And they have to be constantly working to make new and delicious beers. Within the brewery is a small taproom that seats roughly 50 people. Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
