Around 1900 it was still common practice in Salzburg’s 50 breweries to produce strong bock beers. Adelbert Behr created a light, fragrant wheat beer in his small brewery in Schallmoos. An amber-colored white wine with a firm, fine-pearly foam and a wonderfully fruity aroma.
That was the birth of the Salzburger Weisse and the dawn of a new beer age.
With over 100 years of history, Die Weisse is Austria’s oldest wheat beer brewery. Today, as then, we practice high-quality brewing there.
Felix Gmachl, who took over the management of the family business on January 1, 2015, shows with his new development of the first gluten-free organic wheat beer on the entire beer market that tradition and innovation are not mutually exclusive.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
