Aldaris
The brewery “Aldaris” dates back to 1865, when the Waldschlösschen Brewery was built on the outskirts of Riga after the idea of the Bavarian German Joachim Dauder. Aldaris is one of the few breweries in Latvia, which is located in its historic site and has kept beer brewing traditions up to the present day. 20th century At the beginning, Waldschlösschen had gained the fame of Europe’s most renowned brewery, as evidenced by the Congress of European Beer makers organized in 1906 in Riga. Aldara was named in a public poll in 1937, in which 3339 people participated.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
