Brasserie de Monaco
FROM 1905 TO 2008
Founded in 1905 under the leadership of HSH Prince Albert I on his own land, this company, despite its success, closed its doors in 1972 after a merger-absorption by a large group. Reviving this activity in the Principality is now a done deal since brewing has been going on again in the Principality since 1 August 2008.
THE MONACO BRASSERIE: BETWEEN TRADITION AND INNOVATION
It was the German company Kaspar Schulz, the oldest brewery equipment manufacturer in the world (1677) that ensured the custom-made production of this installation, combining tradition with an innovative approach: to guarantee optimal quality control, the brewing system is entirely controlled via a 6 m control screen that allows the Master Brewer and visitors to follow each step of the beer-making process in real time.
ART, KNOW-HOW AND SECRETS
Working on the basis of recipes inherited from the old Brewery, Master Brewer François Pichon has selected organic malts to compose 4 beers with authentic tastes: blonde, red, white and seasonal. After 4 weeks of fermentation, they reach the ideal maturation when tasted. Unfiltered, unpasteurized, they thus retain all the benefits of a good beer.
HOMEMADE BEERS & HOME COOKING
The approach of the Brasserie de Monaco is unique: it combines its organic beers with a menu based on fresh and regional products prepared on site. Large wooden tables, contemporary bar, lounge areas, terrace bar, DJ, live bands, giant screens, themed evenings …

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
